CARACTÉRISTIQUES

Tasting notes
A sturdy old Burgundy grape variety, pale gold in colour with green reflections. A fresh bouquet reminiscent of green apples and lemon. It is tangy and distinct on the palate, leaving a pleasant, pure, lingering finish.

Ageing potential: 1 to 3 years
Serving temperature: 8/10 °C
Storage: 12 / 18 °C.
Serve with: Escargots de Bourgogne (Burgundy snails), seafood, pâtés, sausages, ham garnished with parsley.

Geographical area: Côte de Beaune
Grape variety:  100 % Aligoté
Average date of planting: 1960 -1970
Soil: Vineyard plots located around the slopes. Clay-calcareous soils, white earth, sand and fine alluvia.
Exposure: Southerly, South-Easterly

Vinification
Picked by hand in small 13-kg crates.
The grapes are selectively sorted by hand.
Slow pressing for gentle extraction of the juice.
Cold settling, fermentation with natural yeasts and temperature regulation for 30 to 40 days.

Maturation
In oak casks for 12 months.
Fining, cooling.
