CARACTÉRISTIQUES

Tasting notes
Colour: white. The bouquet is swept with notes of minerals, broken flint and flint stones. Its structure and intensity make it a tense wine, which will age very well.

Ageing potential: 2 to 5 years
Serving temperature: 10/12 °C
Storage: 12 / 18 °C
Serve with: cooked pork meats and fish with white sauce

Geographical area: Côte de Beaune Place known as: Le Roncin
Grape variety:  100% Chardonnay
Average date of planting: 1975
Soil: Vineyard plots located around the slopes. Clay-calcareous soils, sand and blue marls
Exposure: Southerly, South-Easterly
Cultivation: Ploughing of soils, “lutte raisonnée” rational management with minimal use of chemicals in our vines

Vinification:
Picked by hand in small 13 kg crates.
The grapes are selectively sorted by hand.
Slow pressing for gentle extraction of the juice
Cold settling, fermentation with natural yeasts and temperature regulation, in oak casks, for 40 to 80 days.

Maturation
In oak casks for 12 months.
Fining, cooling and filtration before bottling.
