CARACTÉRISTIQUES

Tasting notes
Colour: bright ruby red. The very aromatic bouquet gives off notes of berries, cherries and redcurrants. Its fine and elegant palette, with silky tannins, is in harmony with the subtlety of this wine.

Serve with: Œufs meurette (poached eggs in a sauce of Burgundy wine, bacon cubes, onions, shallots and spices), fondue vigneronne (meat fondue cooked in wine), roast meats, cheeses

Geographical area: Côte de Beaune
Grape variety:  100% Pinot Noir.
Average date of planting: 1970 - 1975
Soil: Vineyard plots located around the slopes. Clay-calcareous soils, blue marls, sand and fine alluvia.
Exposure: Southerly, South-Easterly.
Cultivation: Ploughing of soils, “lutte raisonnée” rationally management with minimal use of chemicals in our vines*.

Vinification
Picked by hand in small 13 kg crates.
The grapes are selectively sorted by hand before stemming, pressing and vatting.
Regulation of temperatures, cap-punching and alcoholic fermentation with natural yeasts for 15 to 20 days.
Slow pressing, settling and placing in casks.

Maturation
In oak casks for 12 months.
Fining, fine earth filtration and bottling.
